If you’re looking for a comprehensive guide to gluten-free sourdough baking, Mary Thompson’s book is a great resource. After years of trying dozens of gluten-free bread recipes I found on Pinterest, trying all the store-bought gluten-free breads, and labeling each and every one a failure, I happened upon @acoupleofcelias on Instagram. I followed Mary, watched her process and pre-ordered her book. It changed my life.
The book starts with an introduction to sourdough and the benefits of using gluten-free flours. It then provides detailed instructions on how to create and maintain a sourdough starter using gluten-free ingredients. And if starting your own gluten-free sourdough starter seems too daunting, you can buy a dehydrated one on Mary’s site. But I followed Mary’s instructions and started my own. It took about 14 days to get a good bubbly starter but the process and care were very easy. (Pro tip: set daily reminders on your phone so you don’t forget to feed your starter!)
In her gluten-free sourdough cookbook Thompson includes a variety of recipes for bread, pancakes, waffles, and even pizza crust, all using gluten-free sourdough. Each recipe is well-written and easy to follow, and includes tips for success. I’ve made so many of her recipes and I’ve been pleased with the flavor and texture, and so surprised at how easy it is to make yummy gluten-free goodies.
One of the standout features of this book is the troubleshooting section. Thompson addresses common issues like a sluggish starter or a dense loaf, and provides clear solutions to these problems.
My only warning (if you can call it that) is that these recipes call for numerous flours you may not be able to find locally. A simple sandwich bread may have as many as 10 different flours in it. Getting started isn’t cheap, but once you have the main flours Mary likes to use, you’ll be set to make multiple different recipes! Here’s a link to my favorite flours.
Overall, “Gluten-Free Sourdough Baking” is a valuable resource for anyone looking to bake delicious gluten-free breads and baked goods. I can’t recommend it enough!
